The experiment was conducted to evaluate the effect of ripening chemicals (ethephon) on postharvest quality of treated banana (Sagar). The various concentrations of ripening chemicals (ethephon 250 ppm, 500 ppm, 750 ppm, 1000 ppm and 10000 ppm) were used in the study for ripening of banana under ambient conditions. The treated fruits were assessed for physiological changes such as ripening percentage, weight loss of fruit (%), biochemical aspects such as TSS (0Brix), titratable acidity (%), reducing sugar (%), total sugar (%), ascorbic acid content (mg/100g), total carotenoids (mg/100g) and residual level of the applied ethephon.The treated banana enhanced the ripening process within 3 days and it become full coloured within 5-6 days. Also the treated banana attained appropriate attractive uniform yellow colour and the texture became soft.The estimated residue (ethephon) in treated banana was observed below the existing codex recommendation residual level during 7 days of storage both in treated banana pulp and banana peel.

•To standardize the doses of ripening chemicals for Bananas •To asses the residual level of ripening chemicals and postharvest ripped Bananas

Uniform mature green ‘Meher sagar’ bananas of 13-15 weeks old were collected from the farmer’s field. The hands of the upper most and the lower most portions were excluded from experimentation. Healthy, uniform sized fingers were selected and randomly distributed to each of the treatment. Different concentration of ethephon solutions (Promote) were prepared and then sprayed on the bananas and covered with polyethylene for 24 hours. After that polyethylene was removed and kept the bananas in room at ambient condition. The treatments of the experiment are as follows: T1 = Ethephon 0ppm T2 = Ethephon 250ppm T3 = Ethephon 500ppm T4 = Ethephon 750ppm T5 = Ethephon 1000ppm T6 = Ethephon 10000ppm. Firmness of the banana was measured by using a Digital Firmness Tester. Firmness value was expressed as a resistance force (kg-force/cm2) of the surface. Measurements were taken at three different places of each banana and mean was calculated. Surface colour of banana was determined by using a digital Chroma. CIE L*a*b* coordinates were recorded using D65 illuminants and a 10° Standard Observer as a reference system. L* is lightness, a* (-greenness to+redness) and b* (-blueness to+yellowness) are the chromaticity coordinates. The* and b* values were converted to chroma [C = (a*2 + b*2)1/2] and hue angle [h = tan-1(b*/a*)]. The physico-chemical analysis of the sample for each treatment was done initially at time of harvesting and after 3 days interval during storage. Total soluble solids content was determined with a hand refractometer and expressed as percentage according to A.O.A.C. (1990). Percentage titrable acidity, ascorbic acid content and sugars were estimated by the method of Jacob (1959). ß-carotene content was measured by spectrophotometer (T-80, PG Instrument Ltd., UK) at 451ηm (Alasalvar et al., 2005). The residue level in treated banana was also measured by Gas chromatography flame ionized detector.

Experiment result showed that there is a little difference in nutrient content between treated and non-treated bananas. But the outlook appearance of the chemical treated bananas were attractive than the non treated bananas. It was also observed that higher doses (10000 ppm) can be applied for uniform ripening of bananas and residue remains (0.670-0.095 ppm of ethephon)after 0, 1 day of storage which is below the existing Codex Residue Level (CXL).
