A study was undertaken to identify the processes, equipment and operational technology for roasted rice, locally known as 'muri' in commercial muri mills. The labour requirement, costing of production and net benefits were also investigated. The study was conducted during October 2003 to May 2004. Four semi-automatic Muri mills of BSCIC area of Mashkanda in Mymensingh town were selected for thorough investigation. Muri making processes include mixing salt and water with rice, drying of salted rice on pucca floor under the open sun, temporary (over night) storage of salted rice in gunny bags before roasting, roasting in a mechanical roaster, cleaning and separating either manually or using mechanical sieve, weighing of rice, salt and muri and packaging in special leak-proof plastic bags. Major equipment used for muri production in muri mills are roaster, electric motor and fan/blower and major structure required is the brick and mud furnace, locally known as 'chula'. Materials needed are rice, salt and water for muri; sand for roasting of rice; rice husk as fuel for the furnace and gunny bags and plastic bags for storage and packing of muri. Muri mills with production capacity of about 1300 kg puffed rice per day employed 9 to 12 persons including 7 to 9 labourers both male and female. Monthly salaries varied from Taka 1500 to 4600 for different categories of persons employed. Major production costs were the price of rice (79.8%), rice husk (8.8%), payment of salaries (6.4%) and plastic bags (3.4%). Average yearly production of muri was 319.4.'metric tonnes per mill. Work days were within the range of 15 to 20 days during the months from January to July and from August to December work days increased up to 30. The average selling price of muri was 23,000 Taka/metric tonne. The average yearly net income of each mill was about 3,66,712.00 Taka and the average benefit-cost ratio was 1.06.

To identify the muri making processes, equipment and operational technology used in commercial muri mills and to investigate the production, labour requirements and costs.

Muri market in Mymensingh town was visited to find out the sources of muri and the location of muri making mills and industries by asking the sellers. There are 7 mills in Mymensingh Municipality area that produce muri at a commercial scale, out of which 4 mills are located in the Bangladesh Small and Cottage industries Corporation (BSCIC) area at Mashkanda. All of the four mills were investigated. It was found that muri making technologies are same in all semi-automatic muri mills, so only 4 mills were studied. Data collection: The present study was conducted during the period from October/2003 to May/2004. A draft questionnaire was prepared for collection of data. This questionnaire was then tested by visiting one mill and asking various questions to the owner and the mill workers. The draft questionnaire was then modified in order to collect data relevant to the objectives of the study. The questionnaire and the data sheets were prepared to include all sorts of information covering all broader aspects of muri making as indicated below: Muri making processes, Equipment used in commercial muri mills, Working principles of various equipment,Technical performances of the muri mills, Cost of muri production, gross and net income, and The number of labourers employed. The amount of paddy fed into the functional unit of muri making was measured by taking weight with an ordinary balance used in the mills. A stop watch was used to measure the time required for different processing operations.

Muri is the local name of roasted rice also known as puffed rice, made from rough rice or paddy. It is traditionally prepared by the household women by roasting paddy with hot sand in a frying pan placed over a stove (chula), stirring rice by a hand stick and shaking the rice by shaking and rotation the frying pan by hand. The processes include: a) Soaking paddy in cold water contained in earthen pan for approximately 24 hrs. b) Boiling paddy in cast-iron, aluminum or earthen pan until the kernels swells enough and the husk is ruptured. c) Draining out water from soaked paddy. d) Sun drying of paddy for 6 to 8 hours in a sunny day. e) Dehusking paddy by Dheki. f) Cleaning of milled rice. g) Soaking of rice in water and mixing with salt. h) Drying of rice by sunlight for 4 to 5 hours. i) Frying or roasting of rice in an ordinary aluminum or earthen pan with hot sand, stirring rice by a hand stick and shaking the rice by shaking and rotating the pan by hand.  j) Finally, the Muri is separated and cleaned from sand by means of a hand winnower, locally called as Kula. The average yearly production of each mill was about 319.4 metric tons. The average selling price of muri was 23000 Taka/metric tonne. The average yearly net income of each mill was about 3,66,712.00 Taka and the average monthly net income was 30,560.00 Taka. The average benefit-cost ratio was 1.06
