Dehydration of Bitter Gourd Momordlca Charantia and Star Fruit Averrahoa Billmbi by Solar Dryer

Abstract/ Executive Summary:

Solar dehydration of whole sliced and grated Bitter gourd, Momordica charantia and Star fruit Averrahoa bilimbi has been studied. It was found that dehydration of whole samples was slow and was not complete even after 13 and 21 hr for Bitter gourd and Star fruit, respectively. Dehydration of sliced samples was quite rapid and maximum removal of moisture (about 90%) occurred within 8 and 4 hours for Bitter gourd and Star fruit, respectively. Dehydration rate of grated samples was further enhanced. When the partially dried samples of Bitter gourd after the first day of solar drying were kept overnight in open air the total drying time (for more than 90% moisture removal) was only four hr.

Methodology:

Before starting the dehydration experiments the raw material was analyzed using conventional techniques. For dehydration, the simple cabinet type solar dryer, described earlier, was used. Standard methods were used for dehydration of Korolla and Kamranga. Blanching was done in boiling water for 3 minutes to deactivate the enzymes. Blanching was expected to enhance the thermal decomposition of heat sensitive Vitamin-C, so this technique was not used in the case of Kamranga.

Achievement/Findings:

The solar dryer can be used successfully for drying a variety of agricultural produces, especially fruits and vegetables to prevent spoilage and to retain nutritional value of the material for long period of storage.
