Nutritional Value of Rice-based Bangladeshi Diet-2000

Abstract/ Executive Summary:

National nutritional survey in Bangladesh reveals that the daily food intake is mainly based on polished rice supplemented with small amount of vegetables, fish and lentils. Studies reveal that consumption of food except cereal is much below the requirement level. Vegetable constituted a substantial part of the food intake for rural people. In the composite meals, the level of nutrients except protein and iron were below the requirement. Relevant to Bangladeshi situation, there is recommendation for rice pulse, vegetables, fish, etc to meet the nutrient requirement. Supplementation of rice with fish and lentil resulted in and increased intake of nitrogen, phosphorus, and calcium as well as increased absorption and retention per day. In contrast, absorption and retention of these mineral elements were inhibited in the diets containing the vegetable, lalshak.

Objectives:

To evaluate nutritional quality of rice-based Bangladeshi diet.

Methodology:

Five different diets were prepared simulating foods taken by different classes of people in Bangladesh. Diet 1, rice alone; Diet 2, actual average intake of each food components by common people; Diet prepared from 73% of the recommended amount of lentil, lalshak, molafish and substituted by N-free starch: Diet 4, prepared from the recommended amount of rice-lentis-fish-lalshak; Diet 5, prepared from the recommended amount of rice-lentil-mola fish. Balance experiments were conducted on yong, growing Wistar rats during a 28 day period, using growth and utilization as outcome parameters. Deposition of minerals was studied in various organs and tissues.

Achievement/Findings:

Dietary composition had a significant effect on intake of nitrogen, phosphorus and calcium of animal growth and feed utilization. Protein utilization was affected inversely with increasing intake of dietary protein. However, absorptoin and retention was inhibited in the diets containing the vegetable, lalshak. The utilization of phosphorus and calcium was also affected significantly. The mineralization of bone and fractional calcium and phosphorus content of bone and liver were affected significantly. Supplementation of rice-based diets with fish, lentils and lalshak resulted in an increased intake of mineral and trace elements as well as increased absorption and retention per day. The fractional absorption and retention decreased in inversely with the intake. This study shows that lalshak had a marked inhibitory effect on the mineral absorption, retention and utilization. However, more attention should be paid to inhibitors of mineral availability in Bangladeshi diet.
