Yield of Puffed, Popped and Flattened Rice from Rough Rice-2007

Abstract/ Executive Summary:

BR16, BR23, BRRI dhan28, BRRI dhan32, BRRI dhan44 and BRRI dhan45 were used for puffed and flattened rice. BR16, BR23, BRRI dhan28 and BRRI dhan32 were used for popped rice. Yield varied from 48 to 56% for puffed rice, 50-61% for popped rice and 56-64% for flattened rice from rough rice. But yield of puffed rice from milled rice varied from 71 to 82%.

Objectives:

To measure the yield capacity of rough rice for producing puffed, popped and flattened rice.

Methodology:

BR16, BR23, BRRI dhan28, BRRI dhan32, BRRI dhan44 and BRRI dhan45 were used for puffed and flattened rice. BR16, BR23, BRRI dhan28 and BRRI dhan32 were used for popped rice. Puffed rice. Puffed rice (muri) was prepared by roasting parboiled milled rice in an earthen pot and mixing the resulting roasted rice in hot sand (230⁰C-250⁰C) of the other pot. Preparation of puffed rice is a complicated process. It has several critical steps, which influence the yield of puffed rice. Flattened rice. Flattened rice (chira)is another form of rice indigenous product. It is popular among hardworking people. Flattened rice preparation consisted of soaking rough rice in water and roasting of the soaked rough rice on iron pan or on hot sand. The roasted rough rice was flattened with wooden mortar and pestle or by pressing in between the two rollers. Popped rice. Popped rice (khoi) is prepared from rough rice. Rough rice was heated in hot sand (245⁰C) stirring continuously until completion of popping.

Achievement/Findings:

Puffed rice. Puffed rice yield varied from 48 to 56% of rough rice but from milled rice, yield varied from 71 to 82%. It was observed that there was a varietal difference in puffed rice yields. Puffed rice yield from the milled rice was higher than that from rough rice. The mean yield of puffed rice was 51.5% from rough rice and 75.7% from milled rice. Flattened rice. Flattened rice yield varied from 56.0 to 64.0% (Table 18). BR16 and BR23 had higher flattened rice yield compared to other tested varieties. BRRI dhan28 had the lowest yield (56.0%). The broken flattened rice varied from 8.5 to 15.6% . Higher breakage in flattened rice caused lower yield. The mean yield of flattened rice was 60% of rough rice. Popped rice. Popped rice yield of the tested varieties varied from 50 to 61% for rough rice. The highest yield (61%) was with BR16 and that the lowest yield (50%) was for BRRI dhan28. However non-popped rough rice was the highest for BRRI dhan28 and the lowest for BR16. Thus the mean yield of popped rice was 56.0% of rough rice.
