Nutrient Status of Rice Growing in Different Regions -2005

Abstract/ Executive Summary:

Around sixty rice varieties were collected from South-West, South-East and Northan districts of Bangladesh to know the nutrient status of those barities. Assessment of nutrient status or rice growing in three regions showed that there was apparent variation in protein, ash and fiber content in both brown rice and milled rice sample of 3 different regions. Milling loss of protein ash and fiber in each regional sample were also found similar.

Objectives:

To find out the content of protein, ash and fiber of rice collected from south-west, south-east and northern districts of Bangladesh.

Methodology:

Around 60 rice samples were collected from 17 districts of 3 different regions and were used for the study. One portion of the rough rice seeds samples were dehulled to produce brown rice and other portion were dehulled and milled to around 10% bran polish removal. The brown rice and milled rice analyzed for fiber, ash and protein content. Protein content was determined by micro Kjeldahl method. The ash content in each rice flour sample was estimated by putting samples in a muffle furnace at a temperature 550±5^oC till white grey residue is obtained by following the standard method. For the determination of fiber content, the rice samples were digested with 1.25% H₂SO₄ followed by 1.25% NaOH solution and crude fiber content was determined following method.

Achievement/Findings:

Protein content in brown rice varied from 9.1 to 9.22% in the south west region, 8.54-9.29% in south east and 7.16-8.67% in north Bangladesh. The mean ash content in milled rice varied from 0.54±.02 to 0.68±.03% among the regions. Northern district samples had the highest and south east region sample had the lowest ash content. The mean brown rice fiber content was1.45±0.05, 1.37±0.07 and 1.47±0.10% for south west, south west and northern district samples respectively.
