Three genotypes namely, MC-20, MC-17 and MC-09 were selected for investigating the nutritional changes when they were preserved and processed by different methods. A decreasing trend in protein content was recorded with the increasing storage time (0.54 to 3.76%) probably due to hydrolysis and decrease in total soluble solids. Protein decreasing trend was slightly higher in the Non Perforated Polythene bags than those of the Perforated Polythene bag due to controlled atmosphere in the Non Perforated Polythene bag. On the other hand, a decreasing trend of β-Carotene content (2.66-20.21) was recorded among the treatments with the duration of storage at the room temperature (22-25°C). The contents of vitamin-C of the genotypes decreased drastically (1.5-53%) with duration of storage. After 5 days of storage, the vitamin-C content was higher in the Non Perforated Polythene bag than in the Perforated Polythene bag. Phosphorus content showed slight deterioration (2.14-5.25%) in different duration due to microclimatic effect in the polythene bag. MC-20 had little decrease in the calcium content with the duration of storage but for MC-09 the same values were increased. Iron contents of different genotypes also decreasing trend with the increased duration of storage which were more aggravated under room condition and the content of potassium was increased in the Non Perforated Polythene bag than in the Perforated Polythene bag.

1. To asses the shelf life of some genotypes of bitter gourd,  2. To know the trends of nutritional change under different storage condition of some genotypes of bitter gourd and 3. To find out the optimum storage condition of bitter gourd.

The experiment was conducted during April 2005 to July 2005 in the Laboratory of Horticulture in Bangabandhu Sheikh Mujibur Rahman Agricultural University, Gazipur. The experiment was laid out in a Factorial Completely Randomized Design (CRD) with three replications used by three factors. Factor A was genotypes (MC-09, MC-17, MC-20), factor B was storing materials (PP and NPP bag) and factor C was temperature (40C, 100C and room temperature, 22°-25°C). The polyethylene bag thickness was 0.05mm and the size was 25cm x 30cm. 0.05% perforation was maintained for PP bag. Application of the treatments - Edible field-heat bitter gourd were washed and placed on paper towels and allowed to dry at ambient temperature for 25 to 30 minutes (250C-300C, 65-75% R.H.). The treatments were applied randomly for 1kg of sealed packed. Perforated polyethylene bag - Ten holes of 1.95 mm diameter were created by drilling on the surface of the polyethylene bag randomly. The weighted (1kg) bitter gourd was kept into the PP bag and imposing the treatments, bitter gourd was placed randomly in refrigerator controlling 40C, 100C and in the room temperature. Collection of data - Data of bitter gourd was observed regularly and after each 5 days appearance of the fruits was observed on the following aspects as well as nutritional quality was assessed. Nutritional quality - a) Beta- carotene, b) Ascorbic acid, c) Protein, d) Phosphorus, e) Calcium, f) Potassium, g) Iron. Statistical analysis -  The data were analyzed statistically following the methods of Gomez and Gomez, (1984). Means were compared by DMRT. All the statistical analysis was performed by computer using statistical MSTAT package program.
