Quality and Shelf Life of Salt Treated Solar Tunnel Dried Silver Jewfish (pennahia Argentata) During Storage

Abstract/ Executive Summary:

Eating quality and shelf life of solar tunnel dried silver jewfish (Pennahia argentata) products under different storage conditions were assessed using organoleptic and biochemical parameters. It was found that the use of salt before drying prevented insect infestation of dried fish during storage condition. After 90 days of storage using two different packaging materials viz. polyethylene bag and gunny bag at room temperature the quality of 10, 15, 20 and 25% salt-treated products were considered to be acceptable by the panelists where moisture content reached from an initial value of 15.48-18.56% to 19.70-23.64% for polyethylene bag samples and 23.45-32.46% for gunny bag samples. Highest moisture absorption was observed for unsalted samples under both packaging conditions. Total volatile base nitrogen (TVB-N) content also showed a similar trend of high values for unsalted samples (46.90±0.20 and 57.79±0.52 mg/100g for polyethylene and gunny bag condition, respectively) where TVB-N values for samples stored in gunny bag exceeded the highest acceptable limit of 35-40 mg/100g after 90 days compared to those stored in polyethylene bag which were within the acceptable limit indicating suitability of polythene bag for longer storage compared to that of gunny bags.

Objectives:

1. The objective of the present study was to estimate quality changes in salt treated solar tunnel dried silver jewfish products in polythene bag and gunny bag condition at ambient temperature.

Methodology:

Experimental design - Dried samples of silver jewfish produced in solar tunnel dryer were used for investigation as a representative dried fish samples. The method of dried silver jewfish production using solar tunnel dryer was used. These samples were stored at 2 different packaging conditions: one is polythene bag, and another is gunny bag for 90 days at ambient temperature. The quality of dried samples was examined every 15 days by determining the organoleptic and biochemical aspects. Organoleptic quality assessment - A sensory evaluation of flavor, color, texture, insect infestation, presence of broken pieces and overall acceptance of dried fish was performed using a 9-point hedonic scale (1 = extremely dislike to 9 = extremely like) by a trained panel of expert members at the Department of Fisheries Technology, Bangladesh Agricultural University, Mymensingh as before. Determination of moisture and TVB-N content - Moisture content was determined by placing an accurately weighed known amount of ground sample in a pre-weighed porcelain crucible in a thermostat oven (Gallenkamp, HOTBOX, Model OVB-306) at 105°C for 24 hr until constant weight was obtained. The loss of moisture was calculated as percent moisture. All values were expressed on wet basis. TVB-N (mg N/100 g) values were determined.

Achievement/Findings:

The overall organoleptic characteristics of salt (10%, 15%, 20%, 25%) treated solar tunnel dried silver jewfish products stored in polythene bag and gunny bag at ambient temperature after 90 days of storage was acceptable for human consumption. During the storage period, the increment of moisture and TVB-N content in gunny bag was more pronounced than those stored in sealed polythene bag while the value of TVB-N decreased with increased the treatment of salt concentration. These results suggest that polythene bag is more suitable for longer storage of dried fish compared to that of gunny bags.
