Two rice varieties were tested for protein utilization. Protein digestible was similar for BR11 and Pajam and more than 90% protein was digested. It was not affected by parboiling process. The BR11 rice protein had much higher biological value than Pajam rice protein. Net protein utilization was also higher for BR11 protein than Pajam.

To determine protein digestibility through in vivo protein method.

Two varieties BR11 and Pajam were used. Rats were fed diets consisting of 80% cooked rice and 20% casein. The diet included 15% protein. The rats were fed 10 gram of DM each day.

Total digestibility of dry matter (DM) was similar for all the rice diets-average ranging 96.7%. It was not affected by parboiling process. The protein digestibility was also similar for both the varieties and was not affected by parboiling process. But biological value and net protein utilization of pajam protein was lower than those of BR11 protein.
