Biochemical Analysis and Nutritive Value of Twenty Ber (zizyphus Mauritiana Lam.) Genotypes

Abstract/ Executive Summary:

A study was undertaken to analysis the biochemical traits and nutritive value of twenty ber genotypes in the laboratory of Bangabandhu Sheikh Mujibur Rahman Agricultural University, Salna, Gazipur in cooperation with Horticulture Research Centre, BARI during December 2005 to March 2006. Significant variation was found for different characters, however, no single genotype was found to be superior to others for all of the qualities. Among the twenty genotypes, ZM-009 had the highest TSS (16.90%). The reducing, non-reducing and total sugar contents were recorded maximum in ZM-012 (6.53, 4.97 and 11.50% respectively). B-Carotene and vitamin C contents were found maximum in ZM-009 (89.00 µg/100g) and ZM-039 (134.6 mg/100g). The titrable acidity was ranged from 0.35% (ZM-012) to 2.60% (ZM-039). The Sugar-acid ratio and TSS/acid ratio were recorded maximum as 22.63 and 44.32 in ZM-012, and 21.88 and 44.49 in ZM-044.

Objectives:

To find the biochemical characteristics and nutritional value of the selected ber genotypes.

Methodology:

The experiment was conducted on existing ber orchard at Fruit Research Farm, Horiticulture Research Centre (HRC), Bangladesh Agricultural Research Institute (BARI), Gazipur and laboratory of Bangabandhu Sheikh Mujibur Rahman Agricultural University (BSMRAU), Salna, Gazipur during December 2005 to March 2006. Fruits of twenty indigenous genotypes/varieties were used for this study. The fruits were collected from ber trees previously planted in Fruit Research Farm of HRC, BARI. The germplasm of above genotypes were collected from different regions of Bangladesh and established earlier by in-situ budding through top-working. The stock of the plants were eight to ten years old. The experiment was laid out in Completely Randomized Design (CRD) and replicated thrice. Hundred fruits from each tree were plucked randomly at edible mature stage and analyzed on the date of harvesting. Different biochemical characters viz. moisture (%), dry matter (%), Total soluble solid (TSS), titratable acidity and nutritional value like total sugar, reducing sugar, non reducing sugar, β-Carotene and vitamin C were studied. Except β-Carotene, the other biochemical and nutritional parameters were determined by the methods described in the Manual of Analysis of Fruit and Vegetable products. The β-Carotene was determined by the method. Total soluble solid content was determined by a hand refracto-meter. Five fruits of edible mature stage were taken randomly. A drop of juice squeezed from the sample was placed on the surface of the prism of the refractometer and per cent total soluble solid was obtained from direct reading.
