Community Based Milk Preservation and Processing Technology for Entrepreneurship Development & Employment Opportunity

Abstract/ Executive Summary:

To solve milk marketing in the rural areas, an attempt was made to develop prototype milk preservation & processing unit with available raw materials in the country with the help of local entrepreneur. The milk preservation and processing unit has several components; milk pasteurization plant with pouch filling & cooling equipment, cream separator, fat testing machine, curd making incubator and high speed blender machine for flavor milk processing. The capacity of pasteurization unit 50 litre / batch i.e. total capacity 300 litres/day. Before cooling, milk is packed in food grade polythene pouch and sealed manually and after reached the desire temperature, the polythene pouches is submerged in the hot water in the pasteurization unit and keep it for 30 minutes. It revealed that an entrepreneur can earn more than 5 (five) lac. net income per year as by investing about 6 (six ) lac. through installation of smal lscale milk preservation and processing unit. There is a provision for dhohi making facility by the use of incubator. An entrepreneur can produce at least 50 kg dhohi /day and he/she can earn some additional income from dhohi making. The cost benefit analysis of 10 kg dhohi is about Tk 577.00.

1.Milk pasteurization & cooling unit: This consist of two parts; pasteurization part and cooling part. The capacity of pasteurization unit 50 litre / batch i.e. total capacity 300 litres/day. Before cooling, milk is packed in food grade polythene pouch and sealed manually and after reached the desire temperature, the polythene pouches is submerged in the hot water in the pasteurization unit and keep it for 30 minutes. After completion of pasteurization, milk pouch is cooled in the cooling unit at 4° C for 30 minutes and then it is stored in the refrigerator. 2. Curd/dhohi making: In addition to milk preservation and processing, there is a provision for dhohi making facility by the use of incubator. An entrepreneur can produce at least 50 kg dhohi /day and he/she can earn some additional income from dhohi making. The cost benefit analysis of 10 kg dhohi is about Tk 577.00.
