Biochemical Composition of Body Muscle and Its Caloric Contents of Tawes (puntius Gonionotus, Bleeker)

Abstract/ Executive Summary:

Biochemical composition and energy content of body muscles such as protein, carbohydrate, fat, ash and moisture in Puntius gonionotus were studied from the different water bodies of Dhaka and Savar areas during the period of October 1992 to June 1993. These parameters varied seasonally in relation to reproductive cycle of the fish. The caloric values observed was 1.5 ± 0.12 Kcal/mg in males and 1.81 ± 0.16 Kcal/mg in females. There were a significant correlation between moisture and carbohydrate, moisture and protein, moisture and ash, carbohydrate and protein, fat and ash, fat and total energy content. Body energy reserves were found highest during the early preparatory stage of gonads for the next breeding and frequent feeding period in November than the spawning and post-spawning in June.

Objectives:

To study the biochemical composition of body muscles and its caloric contents in P. gonionotus.

Methodology:

For the present study a number of fishes were collected forthrightly from different water bodies of Dhaka and Saver areas during October 1992 to June 1993. After collection, samples were immediately brought to the laboratory for biochemical analysis. Males and females having a 22 cm in total average length were taken in equal numbers and analyzed separately. Heads, fins, scales were swabed with bloating papers to make them water free. The weighed samples were dried in an oven at 100°C for 24 hours and then minced in an electric grinder. Moisture contents were determined from the difference in the wet- and dry weight. Ash content was estimated by incinerating the dried materials of fish in a crucible in Muffle Furnace at 600°C for 5 hours. The remaining samples were dried in hot air oven at 60°C for up to 6 days. The dried materials were then powered in a glass moter. The carbohydrate analysis was performed by the phenol- sulphuric acid method using glucose as standard. Total nitrogen was estimated by the standard micro- kjeldhal method. From the estimated total nitrogen the percentage of protein was determined by multiplying the conversion factor 6.25. Fat content was determined from the dried materials. Caloric values were calculated by using conversion factors 4.2, 4.19 and 9.5 Kcal/mg for carbohydrate, protein and fat, respectively.
