Beef fattening in Bangladesh is one of the generous economical activities of farmer. It was observed during visit that most of the farmers adopt traditional beef fattening system for beef fattening target the cattle marketing during the Muslim festival “Eid-ul-Azha” . Farmers are not aware or not adopting the beef fatting package already developed by the BLRI. So to study was undertaken to find out the present status of beef fattening and marketing system with the objective of Identification of (a) existing types of cattle fattening systems in terms of sources of animals, feeding , housing, health and bio-security measures, and traceable marketing (b) problems and develop possible solutions; matching with available resources (c) econometric analysis of cattle fattening systems based on existing market and (d) global meat market policy analysis and modeling of beef production and marketing . After the study it was found that, farmers are not adopting the beef fattening package developed by BLRI and few farmers has scientific knowledge on that. The marketing system is poor and slaughtering sytem is very rudimentary, unhygienic and scope of contamination increases. With time passing bacterial load became higher due to open air contamination by the road-side slaughter house. Huge bacterial contamination from slaughter house instruments and floor of slaughter house was found after testing the swab, but there was absence of E. Coli and Salmonella contamination from knife. However further detail study is needed.

1. Identification of different existing cattle fattening systems in terms of sources of animals, feeding and housing, health and bio-security, and marketing and traceability. 2. Identification of problems and development of their possible solutions matching with the resources available to farmers. 3. Econometric analysis of the cattle fattening systems based on existing beef markets. 4. Global meat market policy analysis and modeling of beef production and marketing systems extrapolating the economy of cattle fattening.

Beef production and fattening farming: To achieve the above objectives two sets of questionnaire were constructed to collect data from farmers. One set is for traditional and seasonal fattener and another one is for high input batch fattener. Traditional fatteners are those farmers who raised fattened cattle as a component of a composite herd without any time limit and sell in the festival market. At the beginning beef concentrated districts of each division were identified and selected for data collection. The districts are Joypurhat, Naogaon, Dinajpur and Rangpur from Rajshahi division; Jessore and Kushtia from Khulna division; Noakhali and Feni from Chittagong division; Dhaka, Munshigonj and Manikgonj from Dhaka division; Moulavibazar from Sylhet division and Bhola from Barisal division. This progress report is based on the work conducted in Joypurhat, Naogaon districts of Rajshahi division. Data collection: The data were collected from Sadar and Panchbibi upazilla of Joypurhat districts and from Naogaon Sadar. Data collection were made on farmers general information, livestock farm structure, land holding and land utilization pattern, general information on fattening farm, information on animal feeding management, health management, waste management and marketing, economy of fattening, farmer’s annual income and expenditure and farmer’s view and suggestions on beef fattening. All the data are already tabulated in Microsoft Excel spreat sheet. It will be analyzed using MS excel, SPSS, MstatC computer package as per characteristics of data and the objectives. Microbiological evaluation of products: The present study was conducted from July 2005 to June 2006 with the objectives of a. identification of different existing cattle fattening systems in terms of sources of animals, feeding, and housing, health and biosecurity, and marketing and trace ability b. identification of problems and development of their possible solutions matching with the resources available to farmers c. econometric analysis of the cattle fattening systems based on existing beef markets d. global beef market policy analysis and modeling of beef production and marketing systems extrapolating the economy of cattle fattening. During this study period two major works were done A. Collection of data from the beef fattening farms: data on different inputs, such as, source and type of animals, feeds and forages, disease control and health management, housing management including labor, capital, season, period of fattening, output such as, type and system of management and marketing, traceability, and problems related to the system were collected through a set of questionnaire. B. Visiting of slaughter house and collection of meat samples and testing: to know the physical and hygienic condition of slaughter house, slaughtering and meat processing quality of meat (physical and microbiological), 5 slaughter houses were visited, data were recorded and collection of meat samples and testing in the laboratory were conducted. To perform microbiological analysis of meat, bacterial contamination by the butcher and their instruments, meat samples were tested for total plate count for bacteria using nutrient agar, total plate count for E. Coli using EMB agar and total plate count for Salmonella using SS agar.
