Economic Assessment of Small-scale Milk Preservation and Processing Technology at Community Level.

Abstract/ Executive Summary:

The small-scale dairy farmers compel to sale their milk in middle men or Foria who’s are harvesting the maximum benefit from milk selling. To solve milk marketing in the rural areas, an attempt was made to develop prototype milk preservation and processing unit with available raw materials in the country with the help of local entrepreneur. The milk preservation and processing unit has several components; milk pasteurization plant with pouch filling and cooling equipments, cream separator, fat testing machine, curd making incubator and high speed blender machine for flavor milk processing. The capacity of pasteurization unit 50 liter / batch i.e. total capacity 300 liters / day. Before cooling, milk is packed in food grade polythene pouch and sealed manually and after reached the desire temperature, the polythene pouches is submerged in the hot water in the pasteurization unit and keep it for 30 minutes. It revealed that an entrepreneur can earn more than 5 lac net income per year as by investing about 6 lac through installation of small-scale milk preservation and processing unit. Further, in addition to milk preservation and processing, there is a provision for curd making facility by the use of incubator. An entrepreneur can produce at least 50 kg curd/day and he/she can earn some additional income from curd making. The cost benefit analysis of 10 kg curd is about TK 577.00. Therefore, it may be concluded that small scale milk preservation and processing unit not only able support the milk marketing and processing of small scale dairy in the country but also can be used as a tool for livelihood activity.

Objectives:

1. To estimate the economic profitability of small-scale milk preservation and processing technology; 2. To estimate the number of employment generated by a small-scale milk preservation and processing unit; 3. To make policy recommendations for disseminating the technology at community level.

Methodology:

The milk preservation and processing plant consists of milk pasteurization and cooling units, cream separator, fat tester, an incubator for curd making and high speed blending machine for processing of flavor milk. Milk pasteurization and cooling units: This consists of two parts: pasteurization part and cooling part. The capacity of pasteurization unit 50 liter / batch i.e. total capacity 300 liters / day. Before cooling, milk is packed in food grade polythene pouch and sealed manually and after reached the desire temperature, the polythene pouches is submerged in the hot water in the pasteurization unit and keep it for 30 minutes. After completion of pasteurization, milk pouch is cooled in the cooling unit at 4? for 30 minutes and then it is stored in the refrigerator. Curd making: In addition to milk preservation and processing, there is a provision for curd making facility by the use of incubator. An entrepreneur can produce at least 50 kg curd/day and he/she can earn some additional income from curd making.
