An investigation was carried out the objectives to identify the presence of adulterants in milk and meat available in the market of selected locations. To determine the contaminants and adulterants in milk and meat available in the market such as Dhaka, Savar, Gazipur, Pabna, Sirajgonj and also Super markets in Dhaka & Chittagong cities liquid milk samples marketed by different companies such as Milk vita, Aarang, Farm Fresh, Pran, Tatka and Super Dairy, samples were collected and analyzed in the Lab. by using Lactostar machine. The bacterial load in the samples was determined through culture in nutrient agar and EMB agar using pour plate method and heavy metal such as Cr, Pb and Cd by using AAS. The results indicated that the fat % among the Brand samples varied from 3.53 to 3.61 which were standard level except the Super Dairy (3.28) and Tatka (3.40). Lactose and SNF % was found as per recommended levels. The milk samples collected from different areas of Bangladesh were also analyzed and found that all samples contained below fat (% 2.94 to 3.44) and protein (% 2.93 to 3.22) percentage as per recommended levels except protein (3.64%) from Chittagong local market. The lactose (%3.49 to 4.35) and SNF (% 6.40 to 8.42) were found below as per recommended levels in milk market of Savar, Gazipur and Pabna. The bacteriological study of milk samples revealed that the total viable count (efu/ml sample) was higher (7.6×106 to 2.35×1012) in local markets (Vendor) of different location and the lowest in all Brand milk (3×101 to 3.5×105) compared to the recommended level (Standard plate count: ≤ 100,000) except Super Dairy Nasirabad (1.5×1012). The coliform count in all collected liquid milk samples was higher (0.7×102 to 5.2×1011) compared to the recommended levels (<50) except Aarong liquid milk, Rd UHT milk, Tatka, Pran pasteurized liquid milk, Farm Fresh UHT milk and milk collected from Savar. Regarding the presence of heavy metal both in Brand and Local milk samples indicated that the “Cr” (ppm) content was higher (0.53 to 0.96 ppm) in all milk samples compared to the IAEA values (0.27 ppm: range 0.22-0.29 ppm) and “Pb” & “Cd” were found in trace amount in all milk samples. On the other hand, the bacteriological study in raw meat (beef) sample revealed that the total viable count (cfu/mg sample) was higher at three different times (7×108 to 6×109) in local markets of Savar, Pabna and Sirajgonj compared to the recommended level (104 to 105) except Nabinagar. The coliform count in collected in raw meat (beef) samples from Pabna and Sirajgonj was higher(9.5×108 to 2×1010) compared to the recommended level except Nabinagar and Savar in different time intervals.

4.Analyses of potentials hazards in dairy, meat and poultry products

1. Location: In order to get data from liquid milk, different locations as Dhaka, Chittagong, Savar, Gazipur, Pabna, Sirajgonj and also Super markets in Dhaka & Chittagong cities were selected for carrying out the experiment such. 2. Milk sample: Experimental milk samples were categorized according to Brand liquid milk selling by different companies (Milk Vita, Aarang, Farm Fresh, Pran, Tatka and Super Dairy) and liquid milk selling by Vendor. 3. Sample test: A. Nutritional composition: Brand and local milk (Milk selling by Vendor) were analyzed in the Lab. by using Lactostar machine for determination of nutritional composition such as Fat, Protein, Lactose and SnF. B. Heavy metal: For detection of heavy metal such as Cr, Pb and Cd in Brand and local milk were used Atomic Absorption spectrometer (AAS) from Soil Science Division of Bangladesh Agricultural Research Institute (BARI), Gazipur. C. Microbial analysis: The microbial analysis of milk and meat samples is essential for ensuring the availability of hygienic milk, meat and their products. It is crucial from the public health point of view. (i) Microbial analysis of milk samples: The milk samples were collected from different locations (Dhaka, Gazipur, Chittagong, Pabna, and Sirajgonj) of Bangladesh. The microbial analysis of milk samples was done to determine the bacterial load (total viable count and total coliform) as colony forming unit (cfu) per ml of milk sample. (a) Test procedure for total viable count (TVC) (b) Test procedure for total coliform count (TCC). (ii) Microbial analysis of meat samples: The microbial analysis of meat samples also includes TVC and TCC. (a) Test procedure for total viable count (TVC) (b) Test procedure for total coliform count (TCC). 4. Statistical analysis: Statistical analysis of the data were carried out by use of one-way analysis of variance (ANOVA).
