Date Palm Juice Syrup Preparation and Preservation

Abstract/ Executive Summary:

Date palm juice contains higher amount of reducing sugars than cane juice. Due to higher amount of reducing sugars exist in prepared date palm gur which are hygroscopic in nature and absorb moisture from surrounding atmosphere and quickly liquifies. On storage, fermentation occurs in liquified gur and becomes unfit for human consumption. Preservation of date palm gur is a problem. Syrup preparation from date palm juice and bottling for preservation may be popular to the gur consumers. This technique may be a barrier to prevent deterioration of Date palm gur during preservation period. So, this study is undertaken to prepare syrup at different concentrations (Brix%) to find out suitable one for bottling and preservation for consumption throughout the year.

Methodology:

Treatments: T1 = Syrup preparation at 65% Brix, bottling and preservation T2 = Syrup preparation at 70% Brix, bottling and preservation T3 = Syrup preparation at 75% Brix, bottling and preservation T4 = Syrup preparation at 80% Brix, bottling and preservation T5 = Syrup preparation at 85% Brix, bottling and preservation Syrup will be prepared at different Brix% at the same date with three replications.

Date palm juice is boiled in open pan boiling system up to 70-750 Brix and preserved in plastic or glass bottles. Easy production and long time preservation. Easy marketable. Nutritious and low cost production. Environment friendly
